The countdown to Mother’s Day is on. What better way to show mom you care than to whip up a batch of these tasty, fruit-studded little cookies? Between the bursting tart taste of the blueberries and the bites of rich, white chocolate, she won’t be disappointed–both in the adult child she gave her life and sanity to raise–or the cookie. This is also a fun and easy one to make with your little ones. I highly recommend making the dough the day before, refrigerating overnight, then popping them in the oven the next day.

2 c. flour, plus 2 tablespoons
1 1/2 tsp. baking soda
1 tsp. salt
3/4 c. dark brown sugar
3/4 c. sugar
2 sticks of butter, melted
1 tsp. vanilla extract
1/2 tsp Amoretti Natural Blueberry Pie extract (optional, but great)
2 eggs
1 c. blueberries
1/2 c. white chocolate chips
Whisk together flour, baking soda and salt. In a separate large bowl, mix sugars and butter well. Mix in extracts and eggs until smooth. Add the flour mixture until just combined. Stir in chocolate chips, then gently add blueberries using a silicon spatula. Wrap dough in plastic wrap and chill it for a MINIMUM of 2 hours (but I suggest leaving it in there overnight as it really needs to be cold and solid before baking or it will run off the pan.)
Preheat oven to 375 F. Drop dough onto baking sheets in rounded teaspoons. Bake about 15 minutes, until slightly browned. Delicious!
